易しいと思う or 簡単だと思う ?

Can I use both phrases to say "I think it is easy" ?

90% of the time it's 簡単.
It's japanese so maybe you can add a bit of uncertainty in there or use negative form to sound more humble and polite.
E.g. 簡単かもしれない。多分簡単だと思う。そんなに難しくないと思う
